Butter, Basil and Breadcrumbs

 

It’s Super Bowl time again! But let’s talk about that for a couple of minutes.  Truly, when it comes to the Super Bowl, there are two types of audience.  There are the sports minded, team chosen people who are tuning in for the game only, rooting for their home team to win, or rooting for their least favorite team to lose.  And then there are the commercial watchers.  The people who tune in for the high end commercials.

 

Which one are you?

 

And that question leads me into my confession. Im just not into football.  I know. Im sorry, but I have never been a sports minded person. 

 

But the Super Bowl?  Well, count me in, because Im the commercial watcher! Im the one who shows up to the party bearing a tray of appetizers, and then impatiently awaits the commercial breaks!  Most of the time, I hang out behind the scene in the kitchen preparing the appetizers, and then Ill run into the room when the commercials come on. And Im okay with that.  The kitchen is where Im happiest.

 

Pork Carnitas

 

Honestly, what is a Super Bowl party without the food?  And thats where Pork Carnitas over Steak Fries come in. Theyre such a delicious alternative to regular nachos.  Spicy shredded pork over crispy fries.  And guacamole.  Its a necessity, really…and so very easy to prepare, especially with the help of Casabellas wonderful 3 n 1 Avocado Tool, Chop ‘N Prep cutting board with this seriously cool prep tray, and Citrus Juicer and Reamer!

The 3 ‘n 1 Avocado Tool makes scooping the avocado out of its shell a breeze, and then in just a few short seconds, mashes or chops it up into a creamy start to your guacamole!  And seriously, this Chop ‘N Prep cutting board is the bomb!  How many times have you started cutting up your veggies, pushed them into a corner of your cutting board, only to end up with a three inch square spot for chopping?!  I do that all the time. Now, all I have to do is push the chopped vegetables to the wonderful little pull out tray that is attached to the cutting board, and I have the whole cutting board to use for chopping!  Clean up? A breeze.  And the Citrus Juicer and Reamer?  It will be used in my kitchen on a daily basis, whether it’s to juice a lemon or lime for a recipe, or an orange or grapefruit for a fresh glass of juice!

Pork Carnitas over Steak Fries

One recipe Pork Carnitas (recipe below)

One recipe Steak Fries

One recipe Guacamole

Queso Fresco, crumbled

1 small tomato, chopped

1 small jalapeño, minced

1/2 cup red onion, chopped

Cilantro and Lime Wedges for Garnish

 

Pork Carnitas

4 pound pork shoulder roast

Salt and Pepper

2 tbsp olive oil

1 1/2 tsp salt

1 tsp ground black pepper

1 large onion, peeled and quartered

3 cloves garlic, minced

1 1/2 tsp dried oregano

3/4 cup beer

Juice of one lime

Juice of one orange, save the halves

 

Chop 'n Prep Bamboo Cutting Board

 

Trim the fat from the pork roast, and cut it into large cubes. Generously season all sides with salt and pepper.  In a large frying pan, heat the olive oil over medium heat.  Add the cubes of pork, and sear until browned on all sides. 

 

Turn your crockpot on to high. Add the seared pork and the oil it was cooked in, salt, black pepper, onion, garlic, oregano, beer, lime juice, and orange juice and halves to the crock pot. 

 

Cook on high for five to six hours, or until the pork is fully cooked, and shreds easily.  Remove the orange halves and shred. Keep the pork in the au jus in the crock pot to keep it moist while you prepare the fries and guacamole.

 

Steak Fries

4 baking potatoes, washed and dried

1/2 cup vegetable oil

Salt and Pepper

 

Cut the potatoes in half, and then quarter each half lengthwise.  Heat the vegetable oil in a large frying pan.  Carefully add the potatoes to the oil, and fry until browned on all sides.  About 20 minutes.  Remove from oil, and drain on a paper towel lined plate.  Discard oil once it has cooled.

 

Guacamole

2 avocados

2 small tomatoes, seeded and chopped

1/2 cup red onion, chopped

1 tbsp jalapeno, minced

Juice of one lime

2 tbsp fresh cilantro, chopped

Salt and pepper to taste

 

Cut the avocados in half, removing the pit, and scoop the pulp into a medium size bowl. Mash the avocado, leaving some chunks. Add the lime juice and gently stir until fully incorporated.  Add the tomatoes, onion, jalapeño, and cilantro, stirring until combined.  Season with salt and pepper.

 

Citrus Juicer and Reamer

 

 

Assemble the Pork Carnitas over Steak Fries:

Mound the pork in the center of your serving tray.  Arrange the fries around the edges of the pork.  Top with the guacamole, Queso Fresco, tomatoes, jalapeño, and red onion.  Garnish with cilantro and lime wedges.

 

Pork Carnitas

 

Serve hot, and enjoy!
